Research focus

Wild yeasts are key components of ecosystems and possess biotechnological potential that remains largely unexplored. However, a better understanding is still needed of how environmental conditions shape their genetic diversity, physiological adaptation, and fermentative capacity, and how this knowledge can be translated into practical applications. The Molecular Genetics Lab studies the evolution, ecology, and adaptation of native Chilean yeasts. Using genomics, bioinformatics, molecular analyses, and experimental evolution, alongside physiological and fermentation-based characterization, the laboratory researches the mechanisms underlying their traits and performance. Its goal is to advance knowledge of microbial diversity and evolution while harnessing these biological resources to develop yeasts with improved properties and novel biotechnological applications, contributing to innovative and sustainable fermentation processes, particularly in the fermented beverage and food industries.
